A Friend for a Sad Omelette

Mmm… it’s early in the morning, and I’ve got a hankering for a little omelette.

Nothing fancy, just a single egg with the yolk poked and swirled around the pan, some salt and pepper, and a big pinch of sharp cheddar in the middle.

But the problem of making an omelette with only one egg is… how little it comes out.

Clearly not enough for breakfast on its own.

So what else is there? I don’t feel like making oatmeal (for some reason, I have zero appetite for oatmeal lately), I don’t want to make another omelette, and I don’t feel like making a smoothie.

How about… a whole wheat biscuit with melted mascarpone and pumpkin butter?

Oh yeah. That’ll work.

I used the whole wheat biscuit recipe from 100 Days of Real Food (my go-to recipe), which takes very little time and always tastes great. And I made sure to eat it right out of the oven, so it was still steaming when I spread on the mascarpone and pumpkin butter.

Makes the omelette look a little less lonely, right? Also, not pictured: the second biscuit that was consumed right after.
