Pizzert: Dessert for Breakfast

April 12, 2011

I had pizza for breakfast.

I also had an oatmeal raisin cookie with frozen yogurt for breakfast.

But would you believe they’re one in the same?

And… that they were healthy?

Well believe it.

I used Chocolate Covered Katie‘s Breakfast Pizzert recipe and turned it into a healthy oatmeal cookie breakfast pizza!

Oatmeal Raisin Cookie Breakfast Pizza

adapted from here

Serves two.

  • 1/2 c whole wheat flour
  • 1 tsp baking powder
  • 1/4 c rolled oats
  • small handful golden raisins
  • 1/2 c water
  • 1/4 c no-sugar-added applesauce
  • 1/2 tsp cinnamon
  • pinch of sea salt

Mix the ingredients together and spread in a round, greased cake pan. Bake for 10 minutes in a NON-PREHEATED oven set to 425.

I topped mine with some banana fro-yo and some vanilla flax granola, but I bet it’d taste even better with some of the fruit compote I made the other day!

      It was pretty delicious. ๐Ÿ™‚
I didn’t add any sweetener, though, so if you don’t put some jam or banana fro-yo on top, I’d recommend adding a little sugar or honey to the batter.
